1 cup quinoa

2 cups of water

1 cup chickpeas (boiled) 1 cup chopped tomato

1/2 cup chopped cucumber

1/4 cup minced onion

1/4 cup chopped parsley

2 tbsp olive oil

1 tablespoon lemon juice

Salt and pepper (as per preference)

How to cook quinoa


After washing the quinoa in water, put it in a pot with water and bring to a boil. When it starts to boil, reduce the heat and simmer for another 15 minutes with a lid on.

Once the quinoa is cooked, turn off the heat and leave to stand for 5 minutes. Then gently release the quinoa with a fork.

In a large bowl, combine quinoa, chickpeas, tomatoes, cucumbers, onions and parsley.

Add olive oil, lemon juice, salt and pepper and mix well.
